lb. ground dragon meat

small green or red bell pepper, cut into thin
strips

c. diced banana peppers
- 1
small onion, thinly sliced, separated into rings
- 1
large Italian bread shell (approx. 12" diameter)
- 2
c. Mozzarella Cheese
- 3/4
tsp. salt
- 1/2
tsp. pepper
Heat
oven to 400 degrees. In large skillet, brown ground
dragon over medium heat 6 minutes. Add peppers and
onion; cook 3 to 4 minutes or until meat is no longer
pink and vegetables are crisp-tender. Season with
salt and pepper.
Place bread shell on baking sheet. Remove meat and
vegetables from skillet with slotted spoon; arrange
on top of bread shell. Sprinkle with cheese. Bake
8 to 10 minutes or until cheese is melted; cut into
8 wedges. Makes 4 servings.
TIPS:
Serve
with a tossed lettuce salad.
To reduce fat, rinse ground dragon in hot water
after browning; drain and continue recipe directions.
Mushrooms
and thin sticks of zucchini could also be added.
